Ingredients
- 2 racks of Colorado lamb (6–8 ribs each)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1/2 cup breadcrumbs
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pat the lamb racks dry with paper towels.
- In a small bowl, combine olive oil, garlic, rosemary, thyme, and Dijon mustard. Rub the mixture evenly over the lamb racks, coating all sides.
- In another small bowl, combine breadcrumbs, salt, and black pepper. Sprinkle the breadcrumb mixture over the lamb racks, pressing gently to adhere.
- Place the lamb racks in a roasting pan, bone side down.
- Roast for 20-25 minutes for medium-rare, or until desired internal temperature is reached (140°F for medium-rare).
- Remove from oven and let rest for 10 minutes before carving and serving.
