  • 2 racks of Colorado lamb (68 ribs each)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1/2 cup breadcrumbs
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the lamb racks dry with paper towels.
  3. In a small bowl, combine olive oil, garlic, rosemary, thyme, and Dijon mustard. Rub the mixture evenly over the lamb racks, coating all sides.
  4. In another small bowl, combine breadcrumbs, salt, and black pepper. Sprinkle the breadcrumb mixture over the lamb racks, pressing gently to adhere.
  5. Place the lamb racks in a roasting pan, bone side down.
  6. Roast for 20-25 minutes for medium-rare, or until desired internal temperature is reached (140°F for medium-rare).
  7. Remove from oven and let rest for 10 minutes before carving and serving.
